It’s that time of year again! The weather is turning crisp and cool, leaves are changing to vibrant autumn colors, and the holidays are just around the corner. I’ve been impressed with each entry in Hood’s Cookbook Delights series that I have seen so far, but this one honestly blew me away. The variety of recipes is staggering, enabling you to choose just how ghoulish you want your party to be. The Halloween Haunted Forest Platter, for example, is a really creative way of dressing up the ordinary vegetable platter that will entice even kids into nibbling on healthy treats, and it’s a really cute idea. (Imagine a forest of broccoli trees haunted by egg ghosts and other creepy, edible creatures.) If you’d rather horrify your guests, there are recipes like the Boogers and Slugs Halloween Cake and Chocolate Slime, foods that may sound or even look disgusting, but are guaranteed to be delicious. The Bleeding Human Heart, a heart-shaped gelatin that oozes thick grenadine blood when cut into portions, is one of my favorites–there’s no doubt it’ll make an impression!
Halloween Delights is so full of fun and creative ideas that my kids literally could not stop poring over it. They had a blast helping me try out some of the recipes in the kitchen and have been begging to try out more ever since. We made Witch’s Hat Chocolate Cupcakes, Creepy Crawly Spider Cookies, and Jack-O-Lantern Cheeseburger Pie. All of the recipes were easy to follow and turned out fabulous, not just in taste but in visual impact as well, which is at least half the fun with a holiday like this. I was also pleased to find a number of recipes that are designed for feeding large crowds, which will make planning a party all the easier. This is the ultimate Halloween cookbook, crammed with enough ideas to see my family through all the spooky parties we will ever throw. Now the only problem is picking which recipes to use–and how to prevent my kids from wanting to celebrate Halloween all year long!

A Bountiful Harvest: Apple Delights Cookbook
I have to admit the apple is one of my all-time favorite fruits, but I’m not very adventurous or inventive in the kitchen, so I rarely eat them unless they are raw or baked into a pie or cobbler. Apple Delights by Karen Jean Matsko Hood has changed that for me, and I couldn’t be more delighted.
The latest in Whispering Pine Press International‘s popular Cookbook Delights series, Apple Delights arrives just in time for the beginning of autumn harvest and baked cool weather treats. Like all of Hood’s cookbooks, it is packed with over 200 mouth-watering recipes that cover every conceivable type of food, from main dishes to soups and salads–and of course, desserts and everything in between. There is also valuable information about the history and folklore of the fruit, as well as a selection of Hood’s internationally published poetry. I especially appreciated the section on different types of apple, since there are so many varieties that it can sometimes be overwhelming when trying to select the right kind for a certain recipe.
My family tried out the Chicken Apple Curry with a side of Apple Dumplings and Apple Tart Cookies for dessert. As always with Hood’s recipes, the directions were clear and easy to follow and the results were fantastic. The curry was very tender, more of a Thai red curry than the traditional yellow curry I expected, with hearty flavors from the tomato and cilantro, and a bright, pleasantly tart and sweet note from the apples. The Apple Dumplings were absolutely delightful, deliciously sweet and juicy, and my kids thought they were a blast. The Apple Tart Cookies were chock full of many different flavors that complemented each other in unexpected ways–I’ve had chocolate with coconut, I’ve had apples with raisins, but never have I had all of them together before. It’s a recipe you have to try to believe–an absolute knockout. And of course, with Apple Delights there’s so much more to look forward to, recipes for traditional goodies like homemade cider, caramel apples, and old fashioned applesauce that I can’t wait to try out, and intriguing new ideas like Apple Cheddar Cookies and Apple and Potato Chowder. No doubt about it: Karen Jean Matsko Hood has penned another winning cookbook that will revolutionize the way you see this humble fruit.

I tried out a several of the recipes from Peach Delights and was absolutely thrilled with the results. I have to admit that the peach is not my favorite fruit, and usually I only eat it in a good cobbler. This cookbook has entirely changed my opinion about peaches–maybe I still won’t like to eat them plain, but now there’s a whole world of possibility for using this fruit to jazz up my cooking! The Cranberry Peach Meatballs were simply incredible–I honestly don’t know that I could say enough things about them. What an innovative recipe, full of ingredients I would have never imagined putting into a meatball, and the result is so flavorful it knocked everyone in my family for a loop. If you need a simple but very impressive appetizer for a pot luck or family gathering, this is it.
We also made the Chicken and Peach Curry, another flavor combination that I wouldn’t have thought of on my own. It was a big hit even with the kids, who don’t generally care for curry. One thing’s for sure: since the Cookbook Delights series has come into my life, my kids are no longer such picky eaters and are much more open to trying out new foods! We finished up our meal with Peach Cobbler, of course, and I can honestly say that that was one of the best cobblers I have ever had. It was very simple to make, with a sweet flaky crust and flavorful, succulent peach filling.

Blueberry Delights Tantalizes the Tastebuds
Blueberry Delights is the latest installment in Karen Hood’s ever-popular Cookbook Delights series. Crammed with delicious recipes and interesting tidbits, graced with the delicate, sure touch of Hood’s poetry, this cookbook is a gem. Cooks of all experience levels and ambition will be thrilled with the variety of recipes that use the delicious blueberry in creative ways, all of them with well laid-out, easy-to-follow instructions. Particularly sumptuous are the recipes in which the berry is used for a savory rather than sweet effect, as in the Blueberry Basil Vinegar or the many mouth-watering main dishes like Pastrami-Spiced Beef with Blueberry Sauce. Other dishes, like the Blueberry Oven Custard Puff Pancake and Blueberry Cheesecake Fudge, promise to be decadent enough to make an impression at the fanciest occasions. There is even a recipe for blueberry wine!
As with all of Hood’s cookbooks, it is the extras that make Blueberry Delights truly stand out. At the beginning of the book, not only will you find a selection of Hood’s themed poetry, but information about identifying different types of blueberry, which will be invaluable for those who like to go berry-picking; tips about growing and cultivating blueberries in your garden; and a fascinating introduction to the berry’s history and folklore. Also present are the helpful metric conversion chart and glossary that will provide excellent assistance for less experienced cooks.
My family tried out the Blueberry Chicken Salsa Torte, Multigrain Blueberry Pilaf, and Oatmeal Blueberry Cookies. Both the torte and the pilaf were longer, more involved recipes than we usually make on a weekday, but both were well worth the extra effort. The torte was simply amazing, the blueberry salsa a bright, flavorful twist that added the perfect touch. The torte recipe is very versatile and will easily accommodate delicious additions like roasted red peppers and pico de gallo for those who want to add their own flair. Although listed in the Appetizer section, it would also make a fun lunch item. The pilaf was equally tasty, and the blueberries added a wonderful burst of flavor to the rice that had even my children (who generally don’t care much for rice) scraping their plates. The wild rice and wheat berries in the recipe also make it very nutritious, a side dish that will please parents just as much as it will kids. The Oatmeal Blueberry Cookies that we had for dessert were quick and easy to make, and alot of fun for my kids to lend a hand. Adding a fruit other than raisins to an oatmeal cookie was a novel experience for my family, and it was a hit–we’ll definitely have to try it again with variations! As always, Karen Hood has produced another winner in her Cookbook Delights series.

The Big Read is an event created by the National Endowment for the Arts with the goal of restoring reading to the center of a community’s culture by “[drawing] communities together around a single book through a month long series of related literary events.” For Spokane County’s third Big Read event, the book chosen is The Things They Carried by Tim O’Brien, a collection of stories about soldiers who served in the Vietnam War. The Things They Carried was a finalist for both the Pulitzer Prize and the National Book Critics Award. The Big Read will culminate on April 16 at the Bing Crosby Theater, when Tim O’Brien and veteran/poet Brian Turner will discuss their experiences in war and their resulting creative works. This event is also part of GetLit!.

April is National Poetry Month!
In 1996, the Academy of American Poets instituted the nation-wide recognition of American poetry. Now, 15 years later, National Poetry Month is the largest literary celebration in the world, bringing poets, librarians, teachers, booksellers, and ordinary citizens together. We in the Hood family enjoy reading poetry very much, and Karen herself is a talented poet with several volumes of poetry in print. We hope that you will join us in celebrating American poetry during the month of April.
According to the National Poetry Month website, the goals of this celebration are to:
- Highlight the extraordinary legacy and ongoing achievement of American poets
- Introduce more Americans to the pleasures of reading poetry
- Bring poets and poetry to the public in immediate and innovative ways
- Make poetry a more important part of the school curriculum
- Increase the attention paid to poetry by national and local media
- Encourage increased publication, distribution, and sales of poetry books
- Increase public and private philanthropic support for poets and poetry
There are literally hundreds of things you can do to participate in National Poetry Month, including attending a poetry reading or organizing one of your own, memorizing a poem, or attend a writing workshop. There are also local events being organized around the country, like the Copper Canyon Press Poetry Reading that will be held on April 5 in Seattle. Check with colleges and bookstores in your area to find out what special events you can attend. If you will be in New York at the end of the month, check out the 9th annual Poetry & the Creative Mind benefit that helps raise funding for the Academy of American Poets. Some of America’s leading artists, scholars, and public figures will participate in this extraordinary evening celebrating the role of contemporary poetry in American culture. Past guest readers at the benefit have included Meryl Streep, Senator Edward Kennedy, Dan Rather, Lauren Bacall, and Alan Alda.

My family had fun trying out the Strawberry Pineapple Chicken Bites. Even though it is in the Appetizer section of the cookbook, I made it as a fun lunch for my kids, and it was a big hit. My oldest is fairly stand-offish about fruit, and to be honest even I am not too fond of pineapple, but this made a very light and flavorful meal that I will be happy to make again. I also made the Spiced Glazed Pork Tenderloin, which was very tender and moist. The spices gave it a taste reminiscent of the holidays, while the strawberry added a bright sweetness that I found particularly tasty. For dessert, we tried the White Chocolate Strawberry Fudgies, which were honestly just about the richest, most delightfully decadent cookie I have ever had. Everyone was blown away, even my husband, who is a strict milk-chocolate-only person. I find myself continually impressed and grateful for the way in which Hood’s recipes tempt even the pickiest eaters in my family to eat foods they don’t normally enjoy.

While the garden freshness of many of the other appetizers appealed strongly to me, I simply couldn’t resist trying out the Empress Chicken Wings. These Asian style wings were amazing, very flavorful without being overly hot and spicy like most recipes I have tried in the past. The selection of light, fruity beverages were so tempting that I had trouble picking just one. The Springtime Freezy Punch was easy to make and got high marks from my entire family, and I can easily imagine how well it will compliment an Easter brunch. For dinner, we had Roast Pork Tenderloin with Cherry Cranberry Glaze, Garlic Bacon Cheddar Mashed Potatoes, and Sweet & Nutty Holiday Peas. All of the food was outstanding, the pork tender and the glaze delightful, the mashed potatoes so packed with flavor that I don’t think we’ll ever be able to go back to eating them plain. The peas were downright amazing. I must confess that I have never liked peas and was actually a bit nervous about how this side dish would be received at the dinner table. No one complained, and there wasn’t a single pea left, not even on my plate.
There are so many enticing recipes in Easter Delights that I will be cooking up a storm for some time to come. I am very impressed with the variety, elegance, and quality of Hood’s recipes–she has transformed me from a shy and inexperienced housewife into a first-class hostess always excited for the next family gathering! My husband’s large (and rather daunting) extended family will be coming to Easter at our house for the first time this year, and with Easter Delights in hand I have no worries about making a good impression. There are recipes for everything I could want, from delicious desserts and sweet treats to fancy quiches and salad dressings. Traditional Easter foods like hot cross buns, deviled eggs, and the classic Easter ham are just the beginning: there is also Bourbon Pecan Roast Chicken, Spiced Cherry Salad, Greek Lemon Chicken Soup, and much more. My family tried out the Chicken Pepperoni, Potatoes Dauphinouise, and Cream Cheese Cookie Hearts. We were all very impressed with the Chicken Pepperoni, which is a fun and unexpected combination of pizza, chicken, and pasta–a good way to get picky eaters to try something new and healthier than Papa John’s or Pizza Hut. The Potatoes Daphinouise were delightfully creamy and cheesy, fancier than ordinary potatoes au gratin. I will be proud to take them as a side dish to family holiday gatherings, where in the past I have felt a bit outclassed by my sisters-in-law and their greater experience in the kitchen. My kids had alot of fun making the cookies, which are very simple and versatile. They are a bit like sugar cookies, but lighter and flakier, and the cream cheese gives them a really wonderful flavor. The cookies were gobbled up quickly, leaving everyone clamoring for more. They will definitely be a favorite at our house. I only wish that I had bought this cookbook in time for Valentine’s Day this year, but I am excited about the possibilities it gives me for creating special ‘date nights’ with my husband all year long, as well as wowing him on our anniversary and many Valentine’s Days to come.
